1-1.5 lb chicken tenders
1 cup almond flour
2 eggs, beaten
1 tbsp garlic powder
1 tbsp Italian seasoning or parsley
2 tsp smoked paprika
1 tsp salt
1 tsp onion powder
1/2 tsp ground black pepper
lemon wedges, for serving
Directions
- Preheat air fryer to 400°F.
- In a shallow bowl, beat eggs. In a second shallow bowl, combine almond flour and spices.
- Dip chicken in the egg, then into the breadcrumb mixture and shake off excess and place on a large dish. Spray both sides of the chicken generously with oil.
- Working in batches, place the chicken in a single layer of the air fryer. Cook for 5 to 6 minutes on each side, until the chicken is cooked through and crispy and golden on the outside.
- Don’t have an air fryer? Bake the tenders on a parchment paper lined baking sheet at 425°F for 16 minutes, turning halfway.
- Serve with lemon wedges.
