Crispy coconut-crusted, baked fish fillets topped with a refreshing and sweet mango salsa will make you feel like you’re eating dinner on the beach!
You can use any white fish for this recipe. My favorites are halibut, cod, flounder, tilapia, and sea bass.

minutes1 lb cod fillets (or any white fish of choice)
1 egg
1/2 cup breadcrumbs, regular or gluten-free
1/2 cup unsweetened finely shredded coconut
1 tsp paprika
1 tsp garlic powder
1/2 tsp cumin
1/2 tsp salt
1/4 tsp black pepper
olive oil, to drizzle
lime wedges, for serving
1 mango, cubed and diced
1/4 cup red bell pepper, finely chopped
1/4 cup red onion, diced
1 jalapeño pepper, diced
2 tbsp fresh cilantro, coarsely chopped
1 tbsp lime juice
1 tbsp olive oil
1 tbsp honey
salt, to taste
pepper, to taste
