2 tbsp vegetable oil (I use olive or avocado)
6 pre-cooked breakfast sausage (such as chicken, turkey, or veggie), sliced
1/2 onion, diced
2 cloves garlic, minced
1 red bell pepper, chopped
2 cups spinach
4 eggs
1/4 tsp salt, plus more to taste
1/4 tsp pepper, plus more to taste
1-2 tbsp fresh chopped herbs (I like thyme, sage, and/or oregano)
