PB&J Overnight Oats

2 cups old fashioned rolled oats
2 cups unsweetened milk of choice
2 overripe bananas, mashed
1/2 cup greek or coconut yogurt
2 tbsp chia seeds
2 tbsp maple syrup
2 tsp vanilla extract
1 tsp cinnamon
1/2 tsp salt
1/4 cup peanut butter, divided
2 tbsp no sugar added raspberry jam, divided
Directions
- In a mixing bowl, combine oats, milk, banana, yogurt, chia seeds, maple syrup, vanilla extract, cinnamon and salt. add 1 tbsp of peanut butter & 1 tbsp of jam
- Cover the bowl and refrigerate for 4-24 hours
- When ready to prep to-go containers or serve, divide remaining peanut butter and raspberry jam among 4 bowls or jars, brush the pb&j up on the sides, divide overnight oats evenly among the containers
- Top with fresh fruit, peanut butter and/or crushed nuts
- Cover and store in the fridge for up to 5 days
