Roasted Brussels Sprouts with Bacon

1 lb brussel sprouts, stems removed and halved
4 strips center cut bacon, chopped
2 tbsp 2 tbsp olive oil
1 tsp 1 tsp onion powder
1 tsp 1 tsp garlic powder
salt and pepper, to taste
optional: 1 tbsp balsamic vinegar (or glaze)
Directions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Prep Brussels sprouts by trimming the stems, removing discolored outer leaves and cutting in half. Place on baking sheet.
- Add center cut bacon (I typically use scissors for efficiency’s sake), olive oil and spices. Toss to coat and turn all the sprouts cut side down in a single layer.
- Bake for 20-25 minutes, tossing halfway. Start checking them at 15 minutes. The bake time of the sprouts will depend on the size of them and your oven. Bake until the Brussels sprouts are fork tender but not mushy.
- If using balsamic, toss after cooking and serve immediately.
